Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
Mix dry ingredients (flour, oats, baking soda, cinnamon) in a bowl.
In another bowl, mix wet ingredients (applesauce, carrot, honey, milk, egg, vanilla).
Combine wet and dry ingredients.
Pour batter into muffin tin.
Bake for 15-18 minutes until a toothpick comes out clean.
