Kids Sweet Potato Tots

 2 large sweet potatoes (peeled and grated)
 ½ cup breadcrumbs
 ¼ cup Parmesan cheese (optional)
 1 egg
 salt and pepper to taste

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

Mix all ingredients in a bowl.

Shape mixture into small tots and place on the baking sheet.

Bake for 20-25 minutes until golden and crispy.
