Quinoa Chicken Salad

 1 cup quinoa (cooked)
 2 cups cooked chicken breast (shredded)
 1 cup cherry tomatoes (halved)
 1 cucumber (diced)
 ¼ red onion (thinly sliced)
 ¼ cup feta cheese (crumbled)
 ¼ cup fresh parsley (chopped)
 3 tbsp olive oil
 2 tbsp lemon juice
 1 tsp Dijon mustard
 salt and pepper to taste

In a large bowl, combine quinoa, chicken, cherry tomatoes, cucumber, red onion, feta cheese, and parsley.

In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.

Pour the dressing over the salad and toss to coat.

Serve chilled or at room temperature.
